Ingredients
  

For the Vegan Chicken
  • Vegan chicken strips – 250 g
  • Olive oil – 1 tbsp
For the Greek Yogurt Ranch Sauce
  • Vegan Greek yogurt – ½ cup
  • Garlic – 1 tsp minced
  • Onion powder – ½ tsp
  • Dill – ½ tsp
  • Parsley – ½ tsp
  • Lemon juice – 1 tbsp
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
Veggies (Optional)
  • Broccoli – ½ cup steamed
  • Carrots – ¼ cup sliced

Method
 

  1. Heat olive oil in a pan.
  2. Add vegan chicken strips and cook for 6–7 minutes until golden.
  3. Mix vegan Greek yogurt, garlic, onion powder, dill, parsley, lemon, salt, and pepper.
  4. Add sauce to the pan.
  5. Stir and cook on low for 3–4 minutes.
  6. Add optional veggies if desired.
  7. Serve warm with rice, pasta, or potatoes.
