Grilled Chicken Gyro Mediterranean Recipe

A vegan Mediterranean gyro made with grilled plant-based chicken, vegetables, pita bread, and dairy-free yogurt sauce.

Ingredients
  

  • Plant-based chicken strips — 14 oz
  • Pita bread — 4 pieces
  • Tomato sliced — 1 cup
  • Cucumber sliced — 1 cup
  • Red onion sliced — ½ cup
  • Olive oil — 1 tbsp
  • Lemon juice — 1 tbsp
  • Garlic powder — 1 tsp
  • Oregano — 1 tsp
  • Salt — ½ tsp
  • Black pepper — ¼ tsp
  • Vegan yogurt sauce
  • Vegan yogurt — 1 cup
  • Lemon juice — 1 tbsp
  • Dill — 1 tbsp
  • Garlic powder — ½ tsp

Method
 

  1. Heat grill pan over medium heat with olive oil.
  2. Season plant-based chicken with garlic powder, oregano, salt, and pepper.
  3. Grill plant-based chicken strips for 10 minutes, turning occasionally.
  4. Mix vegan yogurt sauce ingredients in bowl.
  5. Warm pita bread briefly in skillet.
  6. Place grilled plant-based chicken inside pita.
  7. Add tomato, cucumber, and onion slices.
  8. Spoon yogurt sauce over filling.
  9. Fold pita and serve immediately.
