Ingredients
  

  • Plant-based chicken fillets — 14 oz
  • Quinoa uncooked — 1 cup
  • Water — 2 cups
  • Olive oil — 1 tbsp
  • Lemon juice — 2 tbsp
  • Garlic powder — 1 tsp
  • Salt — ½ tsp
  • Black pepper — ¼ tsp
  • Cherry tomatoes — 1 cup
  • Cucumber diced — 1 cup
  • Spinach — 2 cups
  • Fresh parsley — 2 tbsp

Method
 

  1. Rinse quinoa thoroughly under water.
  2. Cook quinoa with 2 cups water in saucepan for 15 minutes.
  3. Heat grill pan over medium heat with olive oil.
  4. Season plant-based chicken with garlic powder, salt, and pepper.
  5. Grill plant-based chicken 5 minutes per side.
  6. Let grilled pieces rest briefly, then slice.
  7. Place cooked quinoa into serving bowls.
  8. Add spinach, tomatoes, and cucumber.
  9. Arrange grilled plant-based chicken on top.
  10. Drizzle lemon juice and garnish with parsley.
