Grilled Greek Chicken Kebabs Recipe

Vegan Greek-style “chicken” kebabs with fresh herbs, zesty marinade, and grilled veggies bursting with flavor.

Ingredients
  

  • 1 ½ cups vegan chicken substitute cubed
  • 1 red bell pepper chopped
  • 1 zucchini sliced
  • 1 red onion quartered
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 3 cloves garlic minced
  • 1 tbsp dried oregano
  • Salt and pepper to taste

Method
 

  1. Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
  2. Add vegan chicken and veggies, toss to coat well.
  3. Thread cubes and veggies onto skewers alternately.
  4. Preheat grill or pan to medium-high heat.
  5. Grill kebabs 5-6 minutes per side until charred and cooked through.
  6. Serve hot with a sprinkle of fresh herbs.
