Vegan Greek-style “chicken” kebabs with fresh herbs, zesty marinade, and grilled veggies bursting with flavor.

- 1 ½ cups vegan chicken substitute cubed
- 1 red bell pepper chopped
- 1 zucchini sliced
- 1 red onion quartered
- 2 tbsp olive oil
- Juice of 1 lemon
- 3 cloves garlic minced
- 1 tbsp dried oregano
- Salt and pepper to taste
Combine olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
Add vegan chicken and veggies, toss to coat well.
Thread cubes and veggies onto skewers alternately.
Preheat grill or pan to medium-high heat.
Grill kebabs 5-6 minutes per side until charred and cooked through.
Serve hot with a sprinkle of fresh herbs.
