Ingredients
  

For the Vegan Lemon Pepper Chicken
  • Vegan chicken fillets – 250 g
  • Olive oil – 1.5 tbsp
  • Lemon juice – 1.5 tbsp
  • Lemon zest – ½ tsp
  • Black pepper – 1 tsp
  • Garlic – 1 tsp minced
  • Salt – ½ tsp
  • Mixed herbs – ½ tsp
For Serving
  • Steamed veggies – 1 cup
  • Rice or quinoa – 1 cup
  • Parsley – 1 tbsp chopped

Method
 

  1. Add olive oil, lemon juice, zest, garlic, salt, pepper, and herbs to a bowl.
  2. Coat the vegan chicken fillets generously.
  3. Let them marinate for 10 minutes.
  4. Heat a grill pan on medium.
  5. Cook each fillet for 5–6 minutes per side.
  6. Grill lemon slices for extra aroma.
  7. Serve with veggies, rice, and parsley.
