Preheat grill pan on medium heat and lightly grease it.
Thread vegan shrimp onto skewers and grill for 3–4 minutes on each side.
Meanwhile, mix mango, onion, bell pepper, jalapeño, lime juice, cilantro, and salt in a bowl.
Toss salsa gently and chill for 5 minutes to let flavors mingle.
Remove shrimp from grill and drizzle with extra lime juice.
Serve with a generous spoonful of mango salsa.
