Ingredients
  

  • 1 lb vegan chicken pieces
  • 1 avocado diced
  • 1 lime juiced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz black beans, drained
  • 4 cups vegetable broth
  • 1 cup corn kernels
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla strips for garnish
  • Fresh cilantro optional

Instructions
 

  • Sauté onion and garlic in a large pot until fragrant.
  • Add vegan chicken pieces, tomatoes, beans, corn, broth, chili powder, and cumin.
  • Bring to a boil, then simmer for 25 minutes.
  • Stir in lime juice, salt, and pepper.
  • Serve topped with avocado, tortilla strips, and cilantro.
