High-Protein Beef & Quinoa Bowl Recipe

Ingredients
  

  • 1 cup quinoa uncooked
  • 200 g plant-based beef crumbles
  • 1 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp ginger minced
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • ½ cup bell peppers sliced
  • ½ cup spinach chopped
  • 1 tbsp nutritional yeast
  • ½ tsp chili flakes optional
  • ½ tsp salt
  • ¼ tsp pepper

Method
 

  1. Cook the quinoa.
  2. Rinse 1 cup quinoa and cook until fluffy.
  3. Prep the vegan beef.
  4. Heat 1 tbsp olive oil in a pan and add 200g plant-based beef.
  5. Season.
  6. Add 1 tsp garlic, 1 tsp ginger, 1 tbsp soy sauce, salt, and pepper.
  7. Add vegetables.
  8. Stir in ½ cup bell peppers and ½ cup chopped spinach.
  9. Boost flavor.
  10. Add 1 tbsp lemon juice, 1 tbsp nutritional yeast, and chili flakes if desired.
  11. Assemble the bowl.
  12. Serve seasoned vegan beef mixture over warm quinoa.
