Ingredients
  

For the Chickpeas
  • Cooked chickpeas – 1.5 cups
  • Olive oil – 1 tbsp
  • Paprika – 1 tsp
  • Chili powder – ½ tsp
  • Cumin – ½ tsp
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
For the Tacos
  • Tortillas – 4 small
  • Lettuce – 1 cup shredded
  • Tomatoes – ½ cup chopped
  • Onion – 2 tbsp chopped
  • Avocado – ½ sliced
For the Drizzle
  • Lemon juice – 1 tbsp
  • Vegan yogurt – 2 tbsp
  • Garlic powder – ¼ tsp
  • Salt – a pinch

Method
 

  1. Preheat the oven to 200°C or heat a pan.
  2. Toss chickpeas with olive oil, paprika, chili, cumin, salt, and pepper.
  3. Roast or pan-fry for 12 minutes until crisp.
  4. Mix vegan yogurt, lemon juice, garlic powder, and salt.
  5. Warm the tortillas.
  6. Add lettuce, tomatoes, onion, and avocado.
  7. Top with the crispy chickpeas.
  8. Drizzle the yogurt sauce generously.
  9. Serve immediately and enjoy.
