Ingredients

  • Plant protein powder — ¼ cup
  • Unsweetened plant milk — 1 cup
  • Maple syrup — 2 tablespoons
  • Baking soda — 1 teaspoon
  • Vanilla extract — 1 teaspoon
  • Salt — ¼ teaspoon
  • Coconut oil — 1 tablespoon

Method
 

  1. Add sourdough starter to mixing bowl.
  2. Whisk plant milk, maple syrup, and vanilla extract into starter.
  3. Add flour, protein powder, salt, and baking soda.
  4. Mix until smooth batter forms.
  5. Heat skillet over medium heat with coconut oil.
  6. Pour ¼ cup batter onto skillet.
  7. Cook pancake 2–3 minutes until bubbles form.
  8. Flip carefully using spatula.
  9. Cook another 2 minutes until golden.
  10. Repeat with remaining batter.
  11. Serve warm with toppings.
