Ingredients
  

  • 1 vegan roast about 1.5 lbs
  • 2 lemons zested and juiced
  • 4 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Mix lemon zest, juice, garlic, olive oil, thyme, salt, and pepper.
  • Rub marinade all over the vegan roast.
  • Place roast in baking dish and bake for 35-40 minutes, basting occasionally.
  • Let rest 5 minutes before slicing.
