Vegan “roast chicken” infused with lemon zest and garlic for a citrusy, aromatic main dish that feels indulgent.

- 1 vegan roast about 1.5 lbs
- 2 lemons zested and juiced
- 4 garlic cloves minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Preheat oven to 375°F (190°C).
Mix lemon zest, juice, garlic, olive oil, thyme, salt, and pepper.
Rub marinade all over the vegan roast.
Place roast in baking dish and bake for 35-40 minutes, basting occasionally.
Let rest 5 minutes before slicing.
