Ingredients

  • Vegan shrimp – 200 g

  • Garlic – 3 cloves minced
  • Lemon zest – ½ tsp
  • Paprika – ¼ tsp
  • Black pepper – ¼ tsp
  • Salt – ½ tsp
  • Fresh parsley – 1 tbsp chopped
For Garnish:
  • Lemon wedges – 2–3
  • Extra parsley – 1 tbsp

Method
 

  1. In a mixing bowl, combine olive oil, lemon juice, zest, garlic, paprika, salt, and pepper.
  2. Add vegan shrimp to the marinade and toss gently until well coated.
  3. Cover and let marinate for 10 minutes (or longer if you’re patient).
  4. Thread shrimp onto skewers, alternating with lemon slices for extra flair.
  5. Heat grill pan over medium-high heat.
  6. Brush the pan lightly with oil to prevent sticking.
  7. Grill skewers for 2–3 minutes per side until golden and slightly crisp.
  8. Brush remaining marinade over the skewers while grilling.
  9. Remove, sprinkle with parsley, and serve with fresh lemon wedges.
  10. Enjoy the “I totally grilled this myself” moment.
