For the Lemon Herb Marinade
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 tsp minced garlic
  • 1 tsp chopped parsley

Method
 

  1. Preheat the Oven: Set it to 400°F (200°C). Prepare your baking tray like a pro—parchment paper is your best friend.
  2. Marinate the “Chicken”: Combine olive oil, lemon juice, garlic powder, oregano, thyme, salt, and pepper. Toss seitan or tofu and let it marinate 10 minutes.

  4. Add the “Thighs”: Place the marinated vegan protein on the same tray. Bake for another 20 minutes until everything looks gorgeously golden.
  5. Prepare Marinade: Whisk lemon juice, soy sauce, maple syrup, mustard, garlic, and parsley.
