Ingredients
  

For the Vegan Grilled Chicken
  • Vegan chicken fillets – 250 g
  • Olive oil – 1.5 tbsp
  • Lemon juice – 1.5 tbsp
  • Lemon zest – ½ tsp
  • Garlic – 1 tsp minced
  • Mixed herbs oregano, thyme, basil – 1 tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
For Serving
  • Steamed veggies – 1 cup
  • Rice or quinoa – 1 cup
  • Fresh parsley – 1 tbsp chopped

Method
 

  1. Add olive oil, lemon juice, lemon zest, garlic, herbs, salt, and pepper to a bowl.
  2. Coat the vegan chicken fillets in the marinade.
  3. Let them rest for 10 minutes to absorb flavor.
  4. Heat a grill pan on medium.
  5. Place the fillets on the pan.
  6. Cook each side for 5–7 minutes until lightly charred.
  7. Prepare veggies and rice while grilling.
  8. Serve the fillets with sides.
  9. Top with fresh parsley.
