Lemon Herb Shrimp Mediterranean Recipe

Ingredients
  

  • Plant-based shrimp — 12 oz
  • Olive oil — 2 tbsp
  • Lemon juice — 2 tbsp
  • Garlic minced — 2 cloves
  • Oregano — 1 tsp
  • Fresh parsley — 2 tbsp
  • Cherry tomatoes — 1 cup
  • Spinach — 2 cups
  • Salt — ½ tsp
  • Black pepper — ¼ tsp

Method
 

  1. Heat olive oil in skillet over medium heat.
  2. Add garlic and cook briefly.
  3. Add plant-based shrimp and cook 5 minutes.
  4. Stir in cherry tomatoes and spinach.
  5. Add lemon juice, oregano, salt, and pepper.
  6. Cook 3 minutes until vegetables soften.
  7. Sprinkle parsley before serving.
  8. Serve warm.
