Lentil Soup Quick Dinner Recipe

Ingredients
  

  • 1 cup lentils rinsed
  • 3 cups water or broth
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 carrot chopped
  • 1 tsp cumin
  • ½ tsp turmeric
  • Salt and pepper to taste
  • 1 tbsp lemon juice

Method
 

  1. Add chopped onion and carrot, cook for 4 minutes.
  2. Add minced garlic and stir for 1 minute.
  3. Add lentils (1 cup) and mix well.
  4. Pour water or broth (3 cups).
  5. Add cumin, turmeric, salt, and pepper.
  6. Bring to a boil, then reduce heat.
  7. Simmer for 18–20 minutes until lentils soften.
  8. Add lemon juice and stir.
  9. Serve warm.
