  • Brown lentils dry – 1 cup

  • Garlic – 3 cloves minced
  • Carrot – 1 cup diced
  • Celery – ½ cup chopped
  • Crushed tomatoes – 1 cup
  • Vegetable broth – 3 cups
  • Cumin powder – 1 teaspoon
  • Smoked paprika – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Salt – to taste
  • Bay leaf – 1
  • Fresh parsley – 1 tablespoon chopped

Method
 

  1. Rinse lentils thoroughly under running water and set aside.
  2. Heat olive oil in a pot over medium flame.
  3. Add onion and garlic, then sauté for 3 minutes until soft.
  4. Add carrot and celery, cooking for another 3 minutes.
  5. Stir in lentils, crushed tomatoes, broth, bay leaf, cumin, paprika, salt, and pepper.
  6. Bring to a boil, then simmer uncovered for 25–30 minutes until lentils soften.
  7. Remove bay leaf, garnish with parsley, and serve warm.
