Ingredients
  

  • 2 large sweet potatoes cut into fries
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup vegan cheese sauce
  • ½ cup black beans cooked
  • ¼ cup corn kernels
  • ¼ cup red onion diced
  • 1 avocado diced
  • 2 tbsp vegan sour cream
  • 2 tbsp cilantro chopped
  • Lime wedges for garnish

Method
 

  1. Preheat oven to 425°F and line baking sheet with parchment.
  2. Toss sweet potato fries with olive oil, paprika, garlic powder, chili powder, salt, and pepper.
  3. Spread evenly on baking sheet, bake 25–30 minutes, flipping halfway until crisp.
  4. Remove fries, arrange on serving platter.
  5. Drizzle with vegan cheese sauce.
  6. Scatter black beans, corn, and diced onion evenly across fries.
  7. Add avocado chunks and spoonfuls of vegan sour cream.
  8. Garnish with cilantro and lime wedges.
  9. Serve hot and unapologetically messy.
