Ingredients
  

  • 1 can chickpeas 15 oz, rinsed and drained
  • 2 ripe mangoes diced
  • 1 red bell pepper diced
  • 1 cucumber chopped
  • ½ red onion thinly sliced
  • 1 avocado cubed
  • ¼ cup fresh cilantro chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Place chickpeas, mango, bell pepper, cucumber, onion, avocado, and cilantro in a large bowl.
  2. In a small bowl, whisk lime juice, olive oil, maple syrup, salt, and pepper until smooth.
  3. Pour dressing over salad ingredients.
  4. Toss gently to coat everything evenly.
  5. Serve chilled or at room temperature for best flavor.
