Method
- Preheat oven to 400°F (200°C). Grease a baking dish lightly.
- In a bowl, whisk maple syrup, Dijon mustard, soy sauce, garlic powder, paprika, salt, and pepper.
- Arrange vegan chicken thighs in the dish, brush generously with glaze.
- Bake 30 minutes, flipping once and brushing with more glaze halfway.
- Remove when caramelized and golden. Garnish with parsley before serving.
