Method
- Heat olive oil in a pan over medium heat.
- Add plant-based chicken thighs and cook 3 minutes each side.
- Remove and set aside.
- Add onion and garlic, cooking 2 minutes.
- Add cherry tomatoes and olives, stirring for 3 minutes.
- Add oregano, thyme, pepper, and salt.
- Return thighs to the pan and cook 10 minutes.
- Add lemon juice before turning off heat.
- Garnish with parsley before serving.
