Ingredients

  • Vegan ground beef: 2 cups
  • Olive oil: 2 tbsp
  • Garlic: 2 cloves minced
  • Onion: 1 small diced
  • Chili powder: 1 tsp
  • Cumin: 1 tsp
  • Smoked paprika: 1/2 tsp
  • Salt: 1/2 tsp
  • Black pepper: 1/4 tsp
  • For Mango Salsa
  • Mango: 1 large diced
  • Red onion: 1/4 cup diced
  • Jalapeño: 1 small minced
  • Lime juice: 2 tbsp
  • Cilantro: 2 tbsp chopped
  • Salt: 1/4 tsp
  • For Assembly
  • Mini tortillas: 12
  • Fresh cilantro: for garnish
  • Lime wedges: for serving

Method
 

  1. Heat olive oil in skillet; sauté onion and garlic for 3 minutes.
  2. Add vegan beef, chili powder, cumin, paprika, salt, and pepper; cook 7 minutes until browned.
  3. In bowl, mix mango, red onion, jalapeño, lime juice, cilantro, and salt; toss gently.
  4. Warm tortillas in skillet or oven.
  5. Fill each tortilla with vegan beef mixture.
  6. Top with mango salsa.
  7. Garnish with cilantro and lime wedges.
  8. Serve immediately.
