Oat Protein Sugar Cookie Recipe

Ingredients
  

  • Oat flour – 1 1/2 cups
  • Vanilla protein powder – 1/2 cup
  • Baking powder – 1/2 teaspoon
  • Salt – 1/4 teaspoon
  • Coconut sugar or brown sugar – 1/3 cup
  • Unsalted butter or coconut oil – 1/4 cup
  • Egg – 1 large
  • Milk – 2 tablespoons
  • Vanilla extract – 1 teaspoon

Method
 

  1. Preheat oven to 350°F and line baking tray with parchment paper.
  2. Combine oat flour, protein powder, baking powder, and salt in a bowl.
  3. In another bowl, mix butter and sugar until smooth.
  4. Add egg, milk, and vanilla extract, then whisk היט thoroughly.
  5. Gradually fold dry ingredients into wet mixture to form dough.
  6. Scoop tablespoon portions onto tray and flatten gently.
  7. Bake for 9–10 minutes until edges are lightly golden.
  8. Let cookies cool completely before serving.
