  • Rolled oats – 1½ cups
  • Plant-based vanilla protein powder – ½ cup
  • Almond flour – ¼ cup
  • Peanut butter unsweetened – ⅓ cup
  • Maple syrup – ¼ cup
  • Unsweetened almond milk – ¼ cup
  • Coconut oil melted – 1 tablespoon
  • Baking powder – ½ teaspoon
  • Cinnamon powder – ½ teaspoon
  • Vanilla extract – 1 teaspoon
  • Salt – a pinch
  • Dark vegan chocolate chips – ¼ cup optional

Method
 

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. Add oats, protein powder, almond flour, baking powder, cinnamon, and salt to a bowl.
  3. Mix peanut butter, maple syrup, almond milk, coconut oil, and vanilla extract separately.
  4. Combine wet mixture with dry ingredients until thick dough forms.
  5. Fold chocolate chips gently, if using.
  6. Scoop dough, shape into cookies, and place on tray.
  7. Bake for 12–15 minutes until edges set.
  8. Cool slightly before serving.
