Olive Oil Salmon Mediterranean Recipe

A vegan Mediterranean-inspired salmon dish made with plant-based salmon, olive oil, herbs, and roasted vegetables.

Ingredients
  

  • Plant-based salmon fillets — 4 pieces 12 oz total
  • Olive oil — 2 tbsp
  • Lemon juice — 2 tbsp
  • Garlic minced — 2 cloves
  • Oregano — 1 tsp
  • Cherry tomatoes — 1 cup
  • Zucchini sliced — 2 cups
  • Salt — ½ tsp
  • Black pepper — ¼ tsp
  • Fresh parsley — 2 tbsp

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Place zucchini and cherry tomatoes on baking sheet.
  3. Drizzle 1 tbsp olive oil and season lightly.
  4. Roast vegetables for 10 minutes.
  5. Mix remaining olive oil, lemon juice, garlic, oregano, salt, and pepper.
  6. Place plant-based salmon on baking sheet.
  7. Brush olive oil mixture over fillets.
  8. Bake 10 minutes until heated through.
  9. Garnish with parsley before serving.
