For the Vegan “Pork Chops”
  • 2 cups seitan or firm tofu thick slices
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
For the Coating
  • 1 cup panko breadcrumbs
  • ¼ cup vegan Parmesan cheese
  • 2 tbsp nutritional yeast
  • ½ cup plant milk for dipping
  • 1 tbsp Dijon mustard optional
For Garnish
  • Lemon wedges
  • Fresh parsley chopped

Method
 

  1. Prep the “Pork”: Season seitan or tofu slices with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  2. Set Up the Breading Station: Pour plant milk (mixed with Dijon mustard) into one bowl and combine panko breadcrumbs, vegan Parmesan, and nutritional yeast in another.
  3. Coat Generously: Dip each “pork chop” into the milk mixture, then press firmly into the breadcrumb mix until fully coated.
  4. Cook the Crunch:
  5. Oven method: Bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
  6. Pan-fry option: Heat oil in a skillet and cook each side for 4–5 minutes until golden.
