Pea and Mint Soup Recipe

Ingredients
  

  • Olive oil: 2 tbsp
  • Onion: 1 medium diced
  • Garlic: 3 cloves minced
  • Frozen peas: 4 cups
  • Fresh mint leaves: 1/2 cup packed
  • Vegetable broth: 4 cups
  • Lemon juice: 2 tbsp
  • Salt: 1 tsp
  • Black pepper: 1/2 tsp

Method
 

  1. Heat olive oil in pot over medium heat.
  2. Add onion and garlic; sauté 5 minutes until soft.
  3. Stir in peas and broth; bring to boil.
  4. Simmer 10 minutes until peas are tender.
  5. Add mint leaves, salt, and pepper.
  6. Blend soup until smooth and silky.
  7. Stir in lemon juice before serving.
