  • ½ cup vegan butter softened
  • ¾ cup brown sugar
  • ½ cup cane sugar
  • ¼ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 ½ cups vegan chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet with parchment paper.
  2. Whisk flour, baking soda, and salt in a bowl.
  3. In another bowl, cream vegan butter, peanut butter, brown sugar, and cane sugar until fluffy.
  4. Add applesauce and vanilla, mixing until smooth.
  5. Gradually stir dry mixture into wet mixture until dough forms.
  6. Fold in chocolate chips evenly.
  7. Scoop tablespoon-sized dough balls onto baking sheet.
  8. Bake 10–12 minutes until edges firm but centers soft.
  9. Cool cookies on rack before devouring.
