Ingredients
  

For the Vegan “Pork Chops”
  • 2 cups seitan or extra-firm tofu sliced thick
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
For the White Wine Sauce
  • 1 tbsp vegan butter
  • 3 cloves garlic minced
  • ½ cup dry white wine
  • 1 cup vegetable broth
  • ½ cup unsweetened plant cream like oat or soy
  • 1 tsp Dijon mustard
  • ½ tsp thyme
  • ½ tsp lemon zest
  • Salt and pepper to taste
For Garnish
  • Fresh parsley chopped
  • Lemon wedges

Method
 

  1. Prep the “Pork”: Season seitan or tofu slices with olive oil, garlic powder, salt, and pepper.
  2. Sear to Golden: Heat a skillet over medium heat and cook each side for 5–6 minutes until crisp and golden. Set aside.
  3. Start the Sauce: In the same pan, melt vegan butter and sauté minced garlic for 1 minute until fragrant.
  4. Add Wine & Broth: Pour in the white wine and let it simmer for 3–4 minutes until slightly reduced. Add vegetable broth.
  5. Make it Creamy: Stir in Dijon mustard, thyme, lemon zest, and plant cream. Whisk until smooth and thickened.
  6. Combine & Simmer: Return the “pork chops” to the pan and coat them in the sauce. Simmer for 5 minutes.
  7. Finish with Flair: Garnish with parsley and serve with roasted potatoes or rice. Don’t forget your wine glass—chef’s rule.
