Ingredients

For the Vegan “Pork Chops”
  • 2 cups seitan or firm tofu thickly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp thyme
  • ½ tsp salt
  • ½ tsp black pepper
For the Creamy Mushroom Sauce
  • 2 tbsp vegan butter
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1 cup mushrooms sliced
  • 1 cup oat milk or soy milk
  • ½ cup vegetable broth
  • 1 tbsp flour for thickening
  • 1 tsp Dijon mustard
  • 1 tsp soy sauce
  • ½ tsp nutmeg
  • 1 tbsp lemon juice
For Garnish
  • Fresh parsley
  • Cracked

Method

  1. Prep the “Pork”: Toss seitan or tofu with olive oil, garlic powder, thyme, salt, and pepper. Let marinate for 10 minutes.
  2. Sear to Perfection: Heat your skillet and cook each side for 5 minutes until golden brown. Remove and set aside.
  3. Start the Sauce: In the same pan, melt vegan butter. Add garlic and onion, cooking until fragrant and slightly caramelized.
  4. Add Mushrooms: Toss in mushrooms and sauté until tender and golden.
  5. Create Creaminess: Stir in flour and whisk while slowly adding oat milk and broth.
  6. Flavor Explosion: Add mustard, soy sauce, nutmeg, and lemon juice. Stir until thick, smooth, and velvety.
  7. Reunite the Magic: Return “pork chops” to the skillet. Simmer for 5 minutes to soak up all that creamy goodness.
  8. Serve Like Royalty: Garnish with parsley and cracked pepper. Serve with mashed potatoes, rice, or crusty bread.
