  • 2 cups seitan or firm tofu thickly sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ½ tsp salt

For the Brussels Sprouts
  • 3 cups Brussels sprouts halved
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp balsamic vinegar
  • ½ tsp chili flakes
  • ½ tsp salt

Method
 

  1. Prep the “Pork”: In a bowl, mix seitan or tofu with olive oil, garlic powder, paprika, salt, and pepper. Let it marinate for 10 minutes.
  2. Sear to Perfection: Heat a skillet on medium-high heat. Sear each side for 5 minutes until golden and slightly crispy. Remove and set aside.
  3. Preheat the Oven: Set to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Toss the Sprouts: In a bowl, combine Brussels sprouts with olive oil, maple syrup, balsamic vinegar, chili flakes, and salt. Mix well.
  5. Roast Like a Pro: Spread sprouts evenly on the baking sheet and roast for 20–25 minutes until caramelized and crisp on the edges.
  6. Combine & Shine: Serve “pork chops” alongside roasted sprouts. Drizzle with lemon juice and sprinkle with parsley for a fancy finish.
  7. Optional Extra: Add a dollop of vegan garlic butter for an indulgent touch.
