Prep the “Pork”: Mix seitan or tofu with olive oil, paprika, garlic powder, thyme, salt, and pepper. Let marinate for 10 minutes.
Sear to Golden Glory: Heat skillet over medium heat. Cook each side for 5–6 minutes until golden and crisp. Remove and set aside.
Boil the Sweet Potatoes: In a saucepan, cover potatoes with water and boil for 12–15 minutes until fork-tender. Drain well.
Mash with Attitude: Add vegan butter, oat milk, maple syrup, cinnamon, and salt. Mash until smooth and creamy.
Bring It Together: Serve “pork chops” over a generous scoop of mash. Garnish with parsley and cracked pepper.
