Ingredients
  

For the Vegan “Pork Chops”
  • 2 cups seitan or firm tofu thickly sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • ½ tsp thyme
  • ½ tsp salt
  • ½ tsp black pepper
For the Sweet Potato Mash
  • 3 medium sweet potatoes peeled and cubed
  • 2 tbsp vegan butter
  • ¼ cup oat milk or almond milk
  • 1 tsp maple syrup
  • ¼ tsp cinnamon
  • Pinch of salt
For Garnish
  • Fresh parsley
  • Cracked pepper

Method
 

  1. Prep the “Pork”: Mix seitan or tofu with olive oil, paprika, garlic powder, thyme, salt, and pepper. Let marinate for 10 minutes.
  2. Sear to Golden Glory: Heat skillet over medium heat. Cook each side for 5–6 minutes until golden and crisp. Remove and set aside.
  3. Boil the Sweet Potatoes: In a saucepan, cover potatoes with water and boil for 12–15 minutes until fork-tender. Drain well.
  4. Mash with Attitude: Add vegan butter, oat milk, maple syrup, cinnamon, and salt. Mash until smooth and creamy.
  5. Bring It Together: Serve “pork chops” over a generous scoop of mash. Garnish with parsley and cracked pepper.
  6. Optional Extra: Drizzle a little maple glaze for that chef’s kiss finish.
