Method
For the Apple Sauce:
- In a saucepan, combine apples, water, lemon juice, maple syrup, cinnamon, and nutmeg.
- Bring to a boil, then reduce heat and simmer for 10–12 minutes until soft.
- Mash the apples with a fork or blend for a smooth finish.
- Set aside and resist eating it straight from the pot.
For the Vegan Tenderloin:
- Mix olive oil, garlic, soy sauce, maple syrup, thyme, salt, and pepper in a bowl.
- Coat the vegan tenderloin evenly in the marinade and let it rest for 10 minutes.
- Heat a pan over medium heat and sear the tenderloin for 3–4 minutes per side until golden.
- Transfer to a baking tray and roast at 190°C (375°F) for 15 minutes.
- Remove, slice thickly, and drizzle with the apple sauce.
- Garnish with thyme or parsley and serve with roasted veggies or mashed potatoes.
