Ingredients
  

  • Sweet potatoes – 2 large 400 g, peeled and cubed
  • Cooked chickpeas – ¾ cup
  • Unsweetened almond milk – ¼ cup
  • Olive oil – 1 tablespoon
  • Nutritional yeast – 1 tablespoon
  • Garlic powder – ½ teaspoon
  • Black pepper – ¼ teaspoon
  • Salt – to taste
  • Fresh chives – 1 tablespoon chopped

Method
 

  1. Steam sweet potato cubes for 15–18 minutes until fork-tender.
  2. Add cooked chickpeas to a mixing bowl and mash lightly.
  3. Transfer hot sweet potatoes into the bowl.
  4. Add almond milk, olive oil, nutritional yeast, garlic powder, salt, and pepper.
  5. Mash until smooth and creamy, adjusting milk as needed.
  6. Finish with chopped chives and mix gently.
