Ingredients
  

  • 1 cup cooked pasta
  • 1 cup cooked quinoa
  • 2 cups mixed veggies cucumber, bell peppers, carrots
  • 1 cup cherry tomatoes halved
  • ½ cup red onion sliced
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon oregano
  • 1 tablespoon chopped parsley

Method
 

  1. Add pasta, quinoa, veggies, tomatoes, and onion to a mixing bowl.
  2. Combine olive oil, lemon juice, salt, pepper, and oregano in a small bowl.
  3. Pour the dressing over the salad.
  4. Toss gently until everything is evenly coated.
  5. Garnish with parsley and serve chilled.
