Method
- Preheat oven to 375°F (190°C). Place garlic bulb wrapped in foil, roast 20 minutes until soft and fragrant.
- Brush baguette slices with 1 tbsp olive oil. Toast on baking sheet for 8 minutes until golden and crisp.
- In bowl, combine diced tomatoes, roasted garlic cloves (mashed), balsamic vinegar, remaining olive oil, salt, and black pepper.
- Spoon mixture over toasted bread slices. Sprinkle chopped basil for garnish. Serve immediately before bread decides to get soggy.
