Ingredients
  

  • Salmon fillets vegan swap: grilled tofu: 4 (6 oz each)
  • Olive oil: 2 tbsp
  • Garlic minced: 2 cloves
  • Oranges peeled and segmented: 2 large
  • Avocado sliced: 2 medium
  • Baby spinach: 4 cups
  • Red onion thinly sliced: ¼ cup
  • Fresh dill: 1 tbsp
  • Lemon juice: 2 tbsp
  • Salt: ½ tsp
  • Black pepper: ¼ tsp

Method
 

  1. Season salmon with salt, pepper, garlic, and drizzle of olive oil.
  2. Cook in skillet over medium heat 4–5 minutes each side.
  3. Toss spinach, oranges, avocado, onion, dill, and lemon juice in bowl.
  4. Plate salad, top with salmon.
  5. Serve immediately, pretending you’re hosting a five-star bistro.
