A quick vegan twist on lemon herb “tilapia” paired with roasted veggies on one convenient sheet pan.

Ingredients
  

  • 12 oz vegan tilapia-style fillets
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes
  • 1 bell pepper sliced
  • 2 Tbsp olive oil
  • Juice and zest of 1 lemon
  • 2 tsp dried Italian herbs
  • 3 garlic cloves minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss veggies with olive oil, lemon juice, zest, garlic, herbs, salt, and pepper in a bowl.
  3. Arrange vegan fillets and veggies evenly on the sheet pan.
  4. Roast for 20 minutes, flipping veggies halfway, until tender and slightly browned.
  5. Garnish with fresh parsley before serving.
