Ingredients
  

  • 12 oz vegan tilapia-style fillets
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes
  • 1 bell pepper sliced
  • 2 Tbsp olive oil
  • Juice and zest of 1 lemon
  • 2 tsp dried Italian herbs
  • 3 garlic cloves minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Toss veggies with olive oil, lemon juice, zest, garlic, herbs, salt, and pepper in a bowl.
  • Arrange vegan fillets and veggies evenly on the sheet pan.
  • Roast for 20 minutes, flipping veggies halfway, until tender and slightly browned.
