Ingredients
  

For the Sheet-Pan Meal
  • Vegan sausage – 200 g sliced
  • Bell peppers – ½ cup chopped
  • Zucchini – ½ cup sliced
  • Carrots – ½ cup diced
  • Broccoli florets – 1 cup
  • Olive oil – 1.5 tbsp
  • Garlic powder – ½ tsp
  • Paprika – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
  • Lemon juice – 1 tbsp
For Serving
  • Cooked rice or quinoa – 1 cup
  • Parsley – 1 tbsp chopped

Method
 

  1. Preheat the oven to 200°C.
  2. Add all vegetables to a mixing bowl.
  3. Add olive oil, garlic powder, paprika, salt, and pepper.
  4. Toss to coat everything evenly.
  5. Spread the veggies on a parchment-lined tray.
  6. Add sliced vegan sausage on top.
  7. Bake for 20 minutes, flipping once.
  8. Drizzle lemon juice after baking.
  9. Serve with rice or quinoa and garnish with parsley.
