Ingredients
  

  • Plant-based shrimp — 12 oz
  • Cooked jasmine rice — 2 cups
  • Broccoli florets — 2 cups
  • Carrots sliced — 1 cup
  • Garlic minced — 2 cloves
  • Soy sauce — 2 tbsp
  • Maple syrup — 1 tbsp
  • Rice vinegar — 1 tbsp
  • Sesame oil — 1 tsp
  • Olive oil — 1 tbsp
  • Cornstarch — 1 tsp
  • Water — 2 tbsp
  • Green onions — ¼ cup

Method
 

  1. Heat olive oil in skillet over medium heat.
  2. Add garlic and cook briefly.
  3. Add plant-based shrimp and cook 4 minutes.
  4. Add broccoli and carrots; cook 4 minutes.
  5. Mix soy sauce, maple syrup, rice vinegar, water, and cornstarch.
  6. Pour sauce into skillet and stir thoroughly.
  7. Cook 3 minutes until sauce thickens.
  8. Drizzle sesame oil and stir gently.
  9. Divide cooked rice into bowls.
  10. Spoon shrimp mixture over rice and garnish with green onions.
