- Heat 1 tablespoon olive oil in a skillet over medium heat.

- In a bowl, combine avocado, tomatoes, and cucumber.
- Add cooked shrimp to the bowl.
- Drizzle lemon juice and remaining olive oil over mixture.
- Toss gently to combine.
- Garnish with fresh herbs and serve immediately.
