  • 2 cups water
  • 200 g shrimp peeled and deveined
  • 1 cup cucumber chopped
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp parsley chopped
  • Salt and pepper to taste
