Ingredients
  

  • Plant-based shrimp — 12 oz
  • Ramen noodles — 8 oz
  • Vegetable broth — 4 cups
  • Miso paste — 2 tbsp
  • Soy sauce — 2 tbsp
  • Garlic minced — 3 cloves
  • Ginger grated — 1 tsp
  • Sesame oil — 1 tsp
  • Mushrooms sliced — 2 cups
  • Baby spinach — 2 cups
  • Green onions — ¼ cup
  • Corn kernels — 1 cup
  • Nori strips — 2 tbsp

Method
 

  1. Heat sesame oil in large pot over medium heat.
  2. Add garlic, ginger, and mushrooms; cook 4 minutes.
  3. Pour vegetable broth into pot and bring to simmer.
  4. Whisk miso paste and soy sauce into broth.
  5. Add ramen noodles and cook 4 minutes.
  6. Stir in plant-based shrimp and corn; cook 3 minutes.
  7. Add spinach and cook until wilted.
  8. Ladle ramen into bowls carefully.
  9. Garnish with green onions and nori strips.
  10. Serve immediately while hot.
