Ingredients
  

  • 12 oz angel hair pasta
  • 2 tbsp olive oil
  • 4 garlic cloves minced
  • 8 oz mushrooms sliced
  • 1 cup artichoke hearts quartered
  • ½ cup vegetable broth
  • Juice of 1 large lemon
  • ½ tsp crushed red pepper flakes
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh parsley chopped

Method
 

  1. Cook angel hair pasta in salted boiling water until al dente, about 4 minutes. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat.
  3. Add garlic and sauté 1 minute until fragrant.
  4. Stir in mushrooms and artichokes. Cook 5 minutes until tender.
  5. Pour in vegetable broth and lemon juice. Add red pepper flakes, salt, and black pepper. Simmer 4 minutes.
  6. Toss in cooked pasta and parsley. Mix well until pasta absorbs sauce.
  7. Serve hot with extra lemon wedges if desired.
