For the Vegan “Shrimp”:

  • Pepper – ¼ tsp
For the Cabbage Slaw:
  • Shredded cabbage – 2 cups
  • Carrot grated – ½ cup
  • Vegan mayo – 3 tbsp
  • Lime juice – 1 tbsp
  • Apple cider vinegar – 1 tsp
  • Salt – to taste
  • Pepper – ¼ tsp
For Assembly:
  • Small tortillas – 6
  • Avocado sliced – 1 large
  • Fresh cilantro – 2 tbsp
  • Chili flakes – optional for garnish

Method
 

  1. In a pan, heat olive oil over medium flame. Add vegan shrimp, garlic powder, paprika, salt, pepper, and lime juice.
  2. Sauté for 5–7 minutes until slightly crisp and golden — yes, it smells divine.
  3. In a bowl, combine shredded cabbage, carrot, vegan mayo, vinegar, lime juice, salt, and pepper. Mix until creamy and well coated.
  4. Warm the tortillas in a pan or directly over the flame for that soft-but-toasty vibe.
  5. To assemble, add a generous layer of slaw to each tortilla.
  6. Top with golden vegan shrimp, avocado slices, and a sprinkle of chili flakes or cilantro.
