Ingredients
  

  • 1 cup dry brown lentils rinsed
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 can 14 oz diced tomatoes
  • 6 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish optional

Instructions
 

  • Heat olive oil in a pan, sauté onion and garlic until fragrant.
  • Add carrots and celery, cook 5 minutes.
  • Transfer veggies to slow cooker.
  • Add lentils, tomatoes, broth, and spices. Stir well.
  • Cook on low for 6 hours or high for 3 hours.
  • Season with salt and pepper.
  • Garnish with parsley before serving.
