Smores Brownies Recipe

Rich, chewy vegan brownies topped with toasted marshmallows and a graham cracker crust — everything you love about s’mores in brownie form.

Ingredients
  

For the Crust:
  • Crushed vegan graham crackers – 1½ cups
  • Coconut oil – ¼ cup melted
  • Maple syrup – 1 tbsp
For the Brownie Layer:
  • All-purpose flour – 1 cup
  • Cocoa powder – ½ cup
  • Baking powder – ½ tsp
  • Coconut sugar – ¾ cup
  • Coconut oil – ¼ cup melted
  • Plant-based milk – ¾ cup
  • Vanilla extract – 1 tsp
  • Apple cider vinegar – 1 tsp
  • Salt – a pinch
For the Topping:
  • Vegan marshmallows – 1½ cups
  • Dark chocolate chips – ¼ cup

Method
 

  1. Preheat oven to 180°C and line your baking pan with parchment paper.
  2. Mix crushed graham crackers, coconut oil, and maple syrup in a bowl.
  3. Press the mixture firmly into the base of your baking pan.
  4. Bake for 8 minutes and set aside to cool slightly.
  5. In another bowl, whisk flour, cocoa powder, baking powder, and salt.
  6. Add coconut sugar, oil, milk, vinegar, and vanilla. Mix until smooth and glossy.
  7. Pour batter over the crust and spread evenly.
  8. Bake for 25–30 minutes, until the center looks set but fudgy.
  9. Remove from oven, sprinkle vegan marshmallows and chocolate chips on top.
  10. Broil for 1–2 minutes until golden and slightly melted.
  11. Cool completely, slice, and prepare for compliments you absolutely deserve.
