Ingredients
  

  • Sourdough discard — 1 cup
  • Ripe bananas mashed — 1½ cups (about 3 bananas)
  • Whole-wheat flour — 1½ cups
  • Plant protein powder — ⅓ cup
  • Maple syrup — ½ cup
  • Unsweetened plant milk — ½ cup
  • Coconut oil melted — ¼ cup
  • Baking soda — 1 teaspoon
  • Vanilla extract — 1 teaspoon
  • Cinnamon — 1 teaspoon
  • Salt — ½ teaspoon

Method
 

  1. Preheat oven to 350°F.
  2. Mash bananas in mixing bowl using fork.
  3. Add sourdough discard, maple syrup, plant milk, coconut oil, and vanilla extract.
  4. Whisk until smooth.
  5. Add flour, protein powder, baking soda, cinnamon, and salt.
  6. Mix until combined without overmixing.
  7. Pour batter into greased loaf pan.
  8. Bake for 45 minutes until toothpick comes out clean.
  9. Cool bread in pan for 10 minutes.
  10. Remove loaf and cool before slicing.
