Method
- Preheat oven to 350°F.
- Mash bananas in mixing bowl using fork.
- Add sourdough discard, maple syrup, plant milk, coconut oil, and vanilla extract.
- Whisk until smooth.
- Add flour, protein powder, baking soda, cinnamon, and salt.
- Mix until combined without overmixing.
- Pour batter into greased loaf pan.
- Bake for 45 minutes until toothpick comes out clean.
- Cool bread in pan for 10 minutes.
- Remove loaf and cool before slicing.
