Ingredients
  

  • Sourdough discard — 1 cup
  • All-purpose flour — 1 cup
  • Plant protein powder — ⅓ cup
  • Coconut oil melted — ⅓ cup
  • Maple syrup — ½ cup
  • Vanilla extract — 1 teaspoon
  • Baking soda — ½ teaspoon
  • Salt — ¼ teaspoon
  • Vegan chocolate chips — ½ cup

Method
 

  1. Preheat oven to 350°F.
  2. Add sourdough discard to mixing bowl.
  3. Stir maple syrup, coconut oil, and vanilla extract into mixture.
  4. Add flour, protein powder, baking soda, and salt.
  5. Mix until dough forms.
  6. Fold chocolate chips into dough.
  7. Line baking tray with parchment paper.
  8. Scoop dough onto tray in small portions.
  9. Bake cookies for 12 minutes.
  10. Cool cookies before serving.
