Ingredients
  

For the Spicy Yogurt Marinade
  • Vegan chicken fillets – 250 g
  • Vegan yogurt – ½ cup
  • Lemon juice – 1 tbsp
  • Garlic – 1 tsp minced
  • Chili powder – 1 tsp
  • Turmeric – ¼ tsp
  • Cumin – ½ tsp
  • Salt – ½ tsp
  • Pepper – ¼ tsp
  • Olive oil – 1 tbsp
For Serving
  • Rice or flatbread – 1 cup
  • Fresh coriander – 1 tbsp chopped
  • Lemon wedge – 1

Method
 

  1. Add vegan yogurt, lemon juice, garlic, chili, turmeric, cumin, salt, pepper, and olive oil to a bowl.
  2. Coat the vegan chicken fillets well.
  3. Let them marinate for 10–15 minutes.
  4. Heat a grill pan on medium.
  5. Cook each fillet for 5–6 minutes per side.
  6. Let them char slightly for extra flavor.
  7. Serve with rice or flatbread.
  8. Garnish with coriander and lemon.
